Hi Ellen! No problem! All you need to do for an espresso version is add 3 to 4 shots of espresso to the ice cream base (or custard) after it comes off the stove, before you put it in the refrigerator. I personally would still leave the vanilla extract in, but that’s just me. Taste the ice cream base for flavor after you add espresso and you can always add more if it isn’t espresso-y enough for you. Hope you love it!
The enchilada recipe wasn’t from Suzanne, but from the fans’ recipe blog that used to be on her site, back in the last century :) On that blog we weren’t allowed to “give out” recipes from her books but could post any we came up with ourselves. It’s a simple recipe using egg crepes(just beaten eggs) and all the usual fillings, then some heavy cream poured over for the sauce and cheese sprinkled on top, then baked. Very rich and delicious but not for the lactose intolerant! Even my fat-fearing boss would bring chicken leftovers and hint that I might make this and bring it in to work!

I can’t figure out why this recipe calls for 32oz. of cream cheese, even if making into 12 cupcakes; I ended up with a huge amount of the “cake” part after filling the cups. I could have followed the Pina Colada cupcakes but because I didn’t plan to add the Pina Colada ingredients, I thought it best to follow this regular cheesecake recipe. Did I miss something that told me to reduce the amount of ingredients if making cupcakes? Everything still tasted great but I have a ton of product left over.

Hepatic generation of ketone bodies during fasting is essential to provide an alternate fuel to glucose. This is necessary to spare the destruction of muscle from glucose synthesis.
Ketoconazole can cause QT prolongation (an irregular heart rhythm that can lead to fainting, loss of consciousness, seizures, or sudden death). Do not take disopyramide (Norpace), dofetilide (Tikosyn), dronedarone (Multaq), pimozide (Orap), quinidine (Quinidex, Quinaglute), cisapride (Propulsid; no longer available in the US), methadone (Dolophine, Methadose), and ranolazine (Ranexa) while you are taking ketoconazole. If you experience any of the following symptoms, stop taking ketoconazole and call your doctor immediately: fast, pounding, or irregular heartbeat; fainting; dizziness; lightheadedness; or loss of consciousness.

I love sweet carbs, but I started my Keto journey about a month ago and haven’t had any real treats during that time. I eat a very low carb and high fat diet and meander in and out of ketosis during the week. A pure ketogenic diet is so restrictive that meals it can get very repetitive during the week. I’d like to learn more about cooking with oils and how temperature effects their qualities. I can only handle eating so much raw food, and I love to cook my greens and other vegetables in bacon fat and coconut oil. It will be next May before I can get my blood work performed (insurance reasons) so until then I’ll need to be careful and hold back on those after supper dark chocolate excursions! Thanks!!
When you burn key tones as a funeral, whether they are from a supplement or whether they are the ones that your body makes, you do indeed become more efficient utilizing ketones. So that is one advantage. You are correct in that if you simply use these and you do not restrict carbohydrate intake then you're not going to get quite as much benefit. I am a fan of combining these with intermittent fasting, MCT oil, and a high-fat diet.
YUM!! I made a half recipe in a smaller jar, only change I made was adding 1 tbsp MCT oil to keep it softer. BEST LOW CARB ICE CREAM I HAVE EVER HAD!! I stopped even trying to make keto ice cream because it was always a fail. This recipe is a HUGE HUGE WIN!! After sitting out for 60 seconds, it was soft enough to eat. Thank you so much!! Ketosis takes some time to get into – about two weeks of low carb eating is required for the initial adaptation. Wow. Just WOW. These waffles came out perfectly. Non-Keto boyfriend loved them as well. I added the melted butter per the waffle instructions – I am thinking those folks who found them dry may have left that out? My waffle maker made 3 perfect full size waffles, which brings the net carb count to about 2.7 per waffle. Definitely worth the carbs, as one filled me up (the bf was full after 1 1/2 waffles). The majority of chronic diseases like diabetes, hypertension, and heart disease are largely related to obesity which is usually a product of unhealthy lifestyle and poor dietary habits. Appropriately tailored diet regimens for weight reduction can help manage the obesity epidemic to some extent. One diet regimen that has proven to be very effective for rapid weight loss is a very-low-carbohydrate and high-fat ketogenic diet.

I am a stage four kidney disease patient. I am also a type one diabetic. I have had diabetes for 37 years. My Internist suggested the Keto diet for me, but there are so many if the foods on the Keto diet that I’m not able to eat because of my kidneys functioning at 22%. How do I reconcile this diet plan to work with my kidney disease? I’m not allowed any dairy, because of my high potassium. Is almond milk ok to drink? I’m not allowed avocados, mushrooms, spinach, tomatoes, greens, (beet or chard). No bacon, or pork. No melons, bananas, oranges, peaches, pears, some apples, pineapple. I can have berries of all kinds. will this still work for me?

Only issue I had was the springform pan I used leaked some butter into the dutch oven. Perhaps I used a little too much or my almonds weren’t ground finely enough. I may try 6oz of almond flour next time instead. The adults seemed to enjoy it for the most part and it made one little girl happy because every other dessert served that night had gluten and this was something she could eat. 🙂
This is my first try at a Keto Pancake Recipe. My boys and I had fun making these and we got better as we went along. Put our heat on a 5 and definitely using butter in the pan was best even though we had a brand new non-stick. We used a full 8 ounces of cream cheese so added 8 eggs and four teaspoons of stevia in the raw. We mixed the stevia in a separate container with cinnamon to make a sugar free cinnamon topping. Used butter with the cinnamon mix on top and rolled them into crepes. I could see putting bacon/cheese/etc. in the wrap. Saved half for tomm so we will see if the batter keeps well.
These are the widely recognized LCT’s, or long chain fatty acids in coconut oil, mostly saturated, including stearic acid (C18:0), oleic acid (C18:1), and linoleic acid (18:2). The exact percentage of each depends on region the coconut is grown, time of harvest, and other growing variables. They are good as a fuel source in your food, and have some of the tastiness of coconut oil, if your goal is getting into ketosis fast, you won’t benefit from eating a lot more of them compared to eating true medium chain fatty acids.

I love this low carb pancake recipe because it makes fluffy pancakes and the batter is thick enough to make perfectly round pancakes that make the perfect bread for this breakfast sandwich.  Hold your hats, folks, because everything in this recipe is perfect!  I added a little sugar free maple syrup to the batter to sweeten them up.  I cook them on medium heat and wait to flip until little bubbles start to form around the edges.

Also, did you use the full cup of egg whites? Did you use a 9 by 5-inch loaf pan? Did you cook it at 350F and is your oven properly calibrated? Did you bake it for the amount of time the recipe calls for?

I do have a question regarding keto though, is it possible that I’m running on glucose as opposed to fat because I tend to consume a lot of vegetables and I love berries (helps me deal with the fact that we can’t eat fruit). I am a vegetarian who has managed to cut carbs and vegetables, berries and nuts and dairy are my biggest source of carbs. I can’t really justify spending money on tests and stuff so I just want to know, because it is confusing, have people been kicked out of ketosis because they consume a lot of vegetables and some berries?
This cheesecake tastes great on its own, but if you want to add some toppings you could top it with a few blueberries (depending on where your macros are for the day), add some lemon zest, lemon juice, or even drizzle a sugar-free syrup, such as ChocZero’s caramel or chocolate syrup (made with no artificial sweeteners or sugar alcohols). If you have low-carb keto chocolate chips on hand, add those in too!

I was hoping this was going to be the best ever low carb ice cream because I went to so much trouble preparing it, condensing and whipping the cream. The taste was so yummy before I combined he whipped cream. The consistency after it was frozen was like frozen whipped cream not Ice cream. I didn’t have MCT to use. Would that have changed it? Would using Almond Milk or Cashew Milk for part of it make it more dense instead of fluffy?

Made this lemon bar recipe for a work Christmas party and they were a hit, co-workers kept coming back for more. I doubled the recipe and they were perfect. I live at high altitude, over 7,000 ft and the only adjustments I made were a little less butter for the crust and I kept it in the oven 25 min at 350. Also, I used confectioners Swerve as my erythritol ingredient.

This is fantastic ! I only had nacho flavored pork rinds but I LOVED the flavor. Surprisingly not eggy tasting, very fluffy considering the ingredients, and totally took care of a little carb craving just by the texture. In the 1960s, medium-chain triglycerides (MCTs) were found to produce more ketone bodies per unit of energy than normal dietary fats (which are mostly long-chain triglycerides).[15] MCTs are more efficiently absorbed and are rapidly transported to the liver via the hepatic portal system rather than the lymphatic system.[16] The severe carbohydrate restrictions of the classic ketogenic diet made it difficult for parents to produce palatable meals that their children would tolerate. In 1971, Peter Huttenlocher devised a ketogenic diet where about 60% of the calories came from the MCT oil, and this allowed more protein and up to three times as much carbohydrate as the classic ketogenic diet. The oil was mixed with at least twice its volume of skimmed milk, chilled, and sipped during the meal or incorporated into food. He tested it on 12 children and adolescents with intractable seizures. Most children improved in both seizure control and alertness, results that were similar to the classic ketogenic diet. Ketorolac has side effects that can be very dangerous. The risk of having a serious side effect increases with the dose of ketorolac and with the length of treatment. For instance your nutritional value gives the calories, fat, carbs etc. and then it says ” per serving”. what is a serving? for example per ounce, 1/2 cup etc ? . Toradol is a very effective medication for reducing inflammation and pain, but can only be used short term for acute pain. It is commonly used in the first few days after surgery while an inpatient, and then stopped for discharge home when Ibuprofen or other similar medications can be used. For patients who cannot have narcotic pain medications, Toradol can help with pain relief without the issues associated with narcotics.
It snowed here a few days ago before I went grocery shopping. Yes, I had plenty of foods but I was determined to start keto. Thankfully I had plenty of eggs.
