EUREKA!!!!!!!!!!! I am a new reader of your blog but I am not new to low carb. I have missed bread so, so badly. I have tried the low carb tortillas and even tried a paleo bread recipe but nothing gave me that feeling that I was actually eating a yummy sandwich. Enter the cream cheese pancake. I made them for the first time last night. I have actually dubbed them “crepes” as I think mine came out thinner than an actual pancake. But who cares!! They are so yummy. I haven’t tried them for breakfast with sf syrup yet but I intend to. Today I’m in the midst of your three-day keto kickstart so I’m eating ham, cheese and spinach rolled in the “pancake” with a drizzle of ranch dressing. I feel like I’ve discovered electricity! ha! I am officially an avid follower. Keep up the good work! I can’t wait to try the avocado-based chocolate desserts-made some last night. By the way, no need to include “optional” on bourbon as an ingredient. That’s just a waste of ink. LOL!! Wow, Jenny! I’m so glad you were able to shine with your dessert. I love getting compliments on my cooking and I’m sure you did, too. I’m not sure why the top of yours became more brown. All ovens are different and I have noticed that my mother’s wall oven, which is smaller than my free-standing range, cooks hotter and faster than mine. I hope you all enjoyed your husband’s birthday! But sadly, whether due to government subsidy of high carb foods like corn and grain, funding from big companies like Gatorade and Powerbar, our sugar-addicted Western palates, or the constant (unfounded) fear mongering about saturated fats and heart disease, the type of research that shows these fat-burning and performance benefits of carbohydrate restriction simply get shoved under the rug.


Melt the butter in a large saucepan over medium heat. Add 2/3 of the heavy cream (2 cups (473 mL)) and powdered erythritol. Bring to a boil, then reduce to a simmer. Simmer for 30-45 minutes, stirring occasionally, until the mixture is thick, coats the back of a spoon and volume is reduced by half. It will also pull away from the pan as you tilt it. (This will go faster if you use a larger pan.)

I used greek yogurt instead of sour cream and it worked well. Same as many of the other comments, I did not get as much rise as I was hoping for (after 90 minutes), but the bread is very tasty with a nice crumb. I cut into 16 slices. One thing I was wondering, your recipe for cinnamon buns has 2 packets of yeast, this has only one. Would adding more yeast help rise better?

Wondering what fits into a keto diet — and what doesn’t? “It’s so important to know what foods you’ll be eating before you start, and how to incorporate more fats into your diet,” says Kristen Mancinelli, RD, author of The Ketogenic Diet: A Scientifically Proven Approach to Fast, Healthy Weight Loss, who is based in New York City. We asked her for some guidelines.
Why does the ketogenic diet cause electrolyte imbalances? The key reason is that dietary carbohydrate restriction reduces insulin release. Insulin signals cells in the body to absorb glucose in the bloodstream, but it also signals the kidneys to reabsorb/store more water.5 Lower insulin levels (as a result of decreased carb intake) means the kidneys now store less water. This results in dehydration and the flushing out of electrolytes in the process.6 Changes also occur in parts of our body where carbohydrates are stored, such as the liver and muscle. Stored carbohydrates (glycogen) trap three grams of water per gram of glycogen—so when these stores are depleted on keto, the associated water is also lost. This further contributes to the reduced amount of water and electrolytes in the body.
If you’ve got a sweet tooth, it’s highly unlikely you’ll want to give up the creamy, decadent dessert that is cheesecake. But if you’re following the ketogenic diet, you know that regular cheesecake isn’t exactly low carb. In fact, one small piece of cheesecake, on average, can contain up to 45 grams of carbs per slice—which means it could easily have you kissing ketosis goodbye. That is, unless you’re up for the task of making your own keto cheesecake at home… (and we’re willing to bet this will become one of your favorite low-carb recipes).

A person with diabetes developing diabetic ketoacidosis may have one or more of these symptoms excessive thirst or drinking lots of fluid, frequent urination, general weakness, vomiting, loss of appetite, confusion, abdominal pain, shortness of breath, a generally ill appearance, and dry skin or mouth, increased heart rate, low blood pressure (hypotension), increased rate of breathing, and a distinctive fruity odor on the breath.
Since originally publishing this article, I’ve been asked whether elevating blood ketones with exogenous sources could trigger a ketone-induced release of insulin that would theoretically reduce hepatic ketogenesis and perhaps slow fat mobilization. This makes sense since you are putting more energy into the system in general (from exogenous ketones), so there would be less need to draw off your own fat stores.
Burns fat: You can drop a lot of weight — and quickly — on the keto diet.[3] Ketones suppress ghrelin — your hunger hormone — and increase cholecystokinin (CCK), which makes you feel full.[4] Reduced appetite means it’s easier to go for longer periods without eating, which encourages your body to dip into its fat stores for energy. Store at room temperature away from light and moisture. Do not store in the bathroom. Keep all medications away from children and pets.Do not flush medications down the toilet or pour them into a drain unless instructed to do so. Properly discard this product when it is expired or no longer needed. Consult your pharmacist or local waste disposal company.
You can greatly lower your chances of getting ketoacidosis by managing your diabetes well. This includes taking all your medicines, including your insulin, as you are told. Measure your blood sugar often to make sure it is not too high or too low. If you are sick, you may need to talk with your healthcare provider about changing your insulin dose for a short time. You might need more insulin than normal when you are sick. Call your healthcare provider if your blood sugar is high, or if you have symptoms. This may help prevent more severe ketoacidosis.

If you’re a cheesecake lover like me, sometimes you want just a serving right? You don’t necessarily feel like making a large standard cheesecake with 8 or 12 servings. Some days or nights you just want a piece, am I right? In fact I could eat a piece every night if I can fit it into my macros for the day! But maybe you’re like me and having a large cheesecake in the house might be too tempting to not indulge in every day or maybe you just won’t be able to stick to one serving?
Search egg substitutes. I like flaxseed that I grind in a coffee mill, one tablespoon to 3 tablespoons water for each egg. Let that soak while you are preparing the rest of the. You can also use flaxseeds for a flour. I bought a bag of it from country life natural foods in Putnam Michigan online. They have lots of non GMO and organic food and their peanuts, they say, are non GMO. You can mix half almond flour or use it alone, I guess, and it has a better flavor. I am surprised they don’t ask for salt in the bread recipe but I add a teaspoon or less , since the butter is salted.

When plasma glucose becomes < 200 mg/dL (< 11.1 mmol/L) in adults, 5% dextrose should be added to IV fluids to reduce the risk of hypoglycemia. Insulin dosage can then be reduced to 0.02 to 0.05 unit/kg/h, but the continuous IV infusion of regular insulin should be maintained until the anion gap has narrowed and blood and urine are consistently negative for ketones. Insulin replacement may then be switched to regular insulin 5 to 10 units sc q 4 to 6 h. When the patient is stable and able to eat, a typical split-mixed or basal-bolus insulin regimen is begun. IV insulin should be continued for 1 to 4 h after the initial dose of sc insulin is given. Children should continue to receive 0.05 unit/kg/h insulin infusion until sc insulin is initiated and pH is > 7.3.

I have a question on sugar since I see it’s not allowed. Is splenda or any other sugar subsitute ok? What if one of the ingredients that is required for a keto recipe contains sugar, does it matter? I haven’t really seen any discussion on how some things may already contain sugar (even if in low doses) may affect the keto diet. Should they be avoided altogether?

I’m thinking results come from sticking to it and “finishing” the diet, aka changing lifestyle. I’ve found with other things that having a mentor is crucial. Ok so these were hands down the BEST pancake recipe. I couldn’t tell they were low carb- tasted exactly like the real deal. I made the exact batch divided it by 2 ( saved 1/2 for tomorrow ) and had 3 pancakes each for a net carb of 9  per portion and that’s including 1/8 cup of Carys sugar free syrup and 15 grams of frozen organic blueberries. Just under 450 calories and a great way to break my fast. This also included 1/2 Tbsp ghee I cooked then in. I’m very precise to the gram on my macros!!! Totally worth it in my books .. thank you – thank you – thank you !!!! A definite keeper !!!
Though it features one of our favorite veggies, carrot cake doesn’t typically fall into the ‘health food’ category—unless it’s this recipe from This Mom’s Menu. (Don’t worry, there’s still cream cheese frosting.) When you begin to restrict carbs from the diet, the kidneys (the body’s filtration system) switch from retaining sodium (aka salt) to rapidly excreting it, along with excess water in the body (Volek, 2011). During the clearance of extra sodium and water from the body, many people experience rapid weight loss. While it may be exciting to see the scale move in a downward direction, know that this is not true weight loss from fat, but instead from the water loss. Therefore, it is important that you replace some of the sodium and water that you are excreting because if these are not replaced, it is likely that you will experience symptoms of keto flu.
I was leery at first about the amounts for the crust but was surprised at how much the butter and erythritol bulked it up. I have Lakanto Golden so I used that in the crust and I think it really helped up the ante on the graham cracker flavor. I couldn’t figure out how my recipe was so much higher in calories (specifically fat), even before I top it. I’ve just now realized the crust calls for 1 1/2 TEASPOONS butter not TBSP butter. May I humbly suggest you adjust that to reflect the gram amount, like the cheesecake portion does? That’s 7 grams correct? LOL, I’ve used three times that.

Oh my goodness…..I don’t usually post on blogs recipes, but i have to make an exception for this one! These were so incredibly good!!! My daughter wanted to make fired pancakes for dinner, so I found this recipe and she fried them up. These were amazing! Not eggy, and the texture was great. After trying these I was thinking that maybe it would be a good batter for fried pickles or zucchini. I am going to experiment. This is such a great recipe! Thank you so much. Cheryl, We use beef gelatin in this recipe to act as a binder and add a bit more chewiness to help simulate regular bread. We haven’t experimented with this recipe to omit the beef gelatin, but you might be able to get a similar result using a bit more psyllium husk powder, flaxseed meal, ground chia seeds, xanthan gum, or guar gum. I never even liked pancakes to begin with. In the days before keto, I never ordered pancakes at diners, or ever thought highly of them. The mean initial weight of the subjects was 101.03±2.33 kg. The weight decreased significantly during all stages of the treatment period. The body weights at the eighth, 16th and 24th week were 91.10±2.76 kg, 89.39±3.4 kg and 86.67±3.70 kg, respectively (Figure 1). Similar to the loss in body weight, a significant decrease was observed in the BMI of the patients following the administration of the ketogenic diet. The initial BMI, and the BMI after the eighth, 16th and 24th week were 37.77±0.79 kg/m2, 33.90±0.83 kg/m2, 33.24±1.00 kg/m2 and 32.06±1.13 kg/m2, respectively (Figure 2).

A great benefit of being keto adapted is that if  you eat a cheat meal or fall off the wagon for a day or two, you will re-enter ketosis much faster. When your body is primed to use fat for fuel, it will more readily do so when reintroduced than someone who has just started a low carb diet. This comes in quite handy when one is fasting. If you find yourself needing a chocolate treat that won’t ruin your eating plan then these wonderful coconut bars could be the answer! Hi Liz, As far as the Swerve goes, most online calculators don’t subtract sugar alcohols when showing net carbs, so that may be the issue. Regarding the butter, all butter is keto approved (as long as it’s real butter). 🙂 If you calculated by hand, then let me know which ingredient is showing a lot of carbs for you and I can help determine what was off. The few net carbs in the recipe come from almond flour and cream cheese. The brands of pantry ingredients I use are linked in the recipe card (pink links). I use Kerrygold for the butter and Philadelphia for the cream cheese.

This article is excellent and I’ve actually read it a few times just to make sure I’m absorbing as much as possible. With that said can we talk a bit about protein? Why does it seem like protein is taking a back seat? What about the athlete who needs to maintain and/or increase muscle mass. I don’t want to make any assumptions and with all the research I’ve done along with personal testing into Keto it just seems to me that protein and its benefits are not a discussion point in this diet. Why?
Being healthy is all about getting the right nutrients and vitamins from your food so always include variety in your diet. Have plenty of meat (or fish), dairy and veggies on a daily basis based on this low carb food list. Use coconut oil and olive oil when you cook and in your salads (respectively) and have a handful of nuts or berries from time to time.
Just curious…is the texture of the finished cheesecake creamy or airy? I ask because I made a cheesecake yesterday, that turned out airy (quite like baking eggs in a quiche), and while it had a great flavor, the texture was definitely NOT what we were looking for. I would love to try this recipe, but I’m hoping others can help with the texture question before I try.
If you have health reasons that make you want to try it and eating bacon, eggs and steak salads every day sounds amazing, maybe you could swing it. If nothing makes you happier than a fresh piece of sourdough, or if beans are one of the protein sources you rely on, there’s no point in trying a diet that’s not going to work. So glad I came across this recipe. I used the exact recipe except I used Philly 1/3 fat cream cheese. Used a Nutri Bullet to blend and it was so easy to throw all ingredients in the blender container. I used Truvia for the sweetener and Walden’s Farm No Cal No Carb Maple Syrup I purchase at Publix grocery. Very Yummy. I could tell by the batter that I was not going to get thick fluffy pancakes, but that was fine with me. I love crepes and these were somewhere in between. I just made smaller round cakes and stacked them, so they appeared thicker. While cooking them, something about the look of the pancakes reminded me of grilled cheese, so next I am going to make two of these without the sweetener and put shredded cheese in between. Trying to decide why other readers were getting an eggy taste, Perhaps the Walden’s Farm Syrup covered it up on mine, but I definitely did not get the egg taste. Thanks again !
I’ve made this recipe 5 times in the past 3 months. It’s super easy and scrumptiously delicious. Even if there were more than 3 net carbs/slice it is so worth it! Most of the people who I’ve served it to are not on a diet or not eating keto, but they’ve raved about it. Cheesecake Factory, eat your heart out. You got nothin’ compared to this cheesecake!
I’m very confused. The title is for a chili, yet the write up says Hungarian goulash. The instructions say to melt the butter yet there’s no butter listed in the ingredients. The ingredients lists sausage but the instructions don’t say sausage anywhere. The instructions also don’t mention anything about the cumin, cayenne, garlic powder, or chili powder. I’m hoping this comes out well as I didn’t notice the discrepancy until after I’d started cooking.
I’ve read other readers comments and I’m wondering if the only difference in using almond meal is the texture? Also, would the measurements be different if using almond meal? When I purchase my almond meal it says almond flour on the container, I did not know there was an almond flour that looks like regular flour. Wanting to try this recipe. It looks yummy.
