I eat relatively healthy and fairly low carb (I am already gluten free). I am interested in getting into Ketosis for the the health benefits, but am quite thin for a guy and don’t want to lose any weight. I look at the sample diet above and am pretty sure I would drop weight quickly (I consume about 2,500+ calories daily now). I eat 3 meals plus 2-3 snacks (snacks mostly of nuts (with raisins that would have to go), greek yogurt (would switch to plain), peanut butter, cheese and fruit (would need to reduce qty)). Would eating straight up butter be ok for additional calories also once I am in Ketosis?
Hi I’m new to Keto. I have been reading about it, and understanding what to eat and what not to eat. My problem is I’m not sure if I’m doing it correctly. I’m constantly hungry whereas information reads that I will never be hungry. I use fats as required along with topping up with vegetables in my meals yet this does not fill me up. I haven’t experienced the Keto flu and I’ve even put on weight! I have been doing this for about 3 weeks now. Any ideas where I am going wrong.
Had to share! Making this right now. The original condensing was taking FOREVER. And then I remembered a trick on boiling noodles in a large frying pan. The theory is that there is more surface area in the frying pan so it boils quicker. The same thing happened here! After about ten minutes the base was condensed to perfection! Just a trick. Too bad we don’t eat noodles anymore because that trick works equally as well!

These were very delicious!!!! I was very surprised thatI would actually like them. Of course at first I flipped it right the first time and then wasn’t paying attention and it was a little burnt on the other side but the other ones came out kinda looking great. Hi I’m just trying this recipe for the first time. I’m currently proving my dough, but was a little confused at one point in the instructions. As I’m not much of a baker I really wasn’t sure what to do, after mixing the wet ingredients with an electric mixer. Was I meant to continue to put flour and sour cream in with the electric mixer, or switch to manual mixing? Or should I have used a dough hook? That seems to be a gap in the instructions, perhaps assuming that the reader will know what to do, but I really didn’t!

The nutrition label I posted is made by a wordpress plugin that sources the ingredient nutrition data from the USDA nutrient database. It totals all the ingredients, then divides by the number of servings indicated. It was the most accurate option as far as nutrition plugins go, but unfortunately, it rounds down as the US labeling laws allow. I don’t believe the nutrition is derived from brand-specific ingredients within the database, so that may further explain the discrepancy. Brand to brand can vary pretty wildly; I used to manually create the nutrition tables in Excel and post them on the site to get a line by line breakdown of everything, but my readers preferred the label.

I wonder if adding a little to the pancake batter will increase the moisture and keep the pancakes fluffy? Or do you recommend Melt butter instead? I used to add canola oil in pancake batter made with white flour. I also use a little unsweetened apple sauce in baking sweet breads, I wonder if that will keep the pancakes moist?

Had you put it in the blender, this would not have happened. I don’t think the brand matters as I’ve seen complaints/comments about this for all the good brands. My niece used the same Now brand and had purple rolls. I used the very same pack about two weeks after and ran it in the blender along with the flaxseed meal (as that’s usually not fine enough) and salt (as my grains are quite large) and everything came out just fine. I continued to use the same pack until it was finished and had no issue.
I love this recipe! Finally a low carb dessert that tastes amazing!! I made a chocolate cheesecake recipe this weekend that was a total fail. How would you recommend tweaking this recipe to make it chocolate flavored? Could I just add cocoa powder? How would melted chocolate affect it? Love this recipe! The blender makes it so much easier and better incorperated than a hand mixer. I only get 4 with a hand mixer. I ate my 4 and had 2 for leftovers. My baby had other thoughts and ate them right up! It tasted a lot better with 6 as well. Slightly crunchy and less egg. I love them with sugar free maple flavored syrup and strawberries. Again, thanks so much! I’m sure I’ll be making them again and again.

Hi Ben, I have a question about being in ketosis. So from what I understand, a serving of Keto os will keep you in ketosis for about 4-6 hours or so……my question is doesn’t your body have to be in constant ketosis in order to really experience the benefits of using the fat as fuel? Also, if someone is not following the Keto diet, what happens to the glucose they are still consuming if they are supposedly using ketones for energy? Also, do you see any benefit from using Keto os vs. Brain Octane? I ask because there is a significant difference in price. Thank you so much!!

I am in ketosis!!!! I got the keto test strips and did the test this morning!! I am so excited!!! I have been on/off of the diet since my birthday on Aug. 11th when the kids took me out to eat! But I got back on the ball, did the soup diet again, and the 3 day kickstart and by golly it worked. I am now going to skip to week 2 of the meal plans coz there are so many fresh veggies at the food pantry and out in my garden. I can’t wait to taste the jalapeno popper soup! I am a little leery about the jalapeno and cheese muffins. I’ll post my thoughts after I try them. A little rest and then I will get to doing the prep. I really wanted to do that on Sunday after shopping but it just didn’t work out that way.
How did yours get salty? I just made these this morning and they are great. The recipe does not call for salt but i followed the recipe and added a little Himalayan sea salt to it and they were not salty at all. Be discerning about what types of fat you’re putting in your body, focusing foremost on monounsaturated fats and MCTs, good amounts of saturated fats, and moderate portions of polyunsaturated fats.
Children who discontinue the diet after achieving seizure freedom have about a 20% risk of seizures returning. The length of time until recurrence is highly variable, but averages two years. This risk of recurrence compares with 10% for resective surgery (where part of the brain is removed) and 30–50% for anticonvulsant therapy. Although the ketogenic diet is more popular than ever now, its origins go back to 1923, when it was founded at the Mayo Clinic to treat epilepsy. Taking a high-fat and extremely low-carb approach to eating, the diet’s breakdown of macronutrients generally falls in the realm of 60-75 percent fat, 15-30 percent protein, and 5-10 percent carbohydrates.
I’m not a huge fan of sweet breakfast, so pancakes are really not something I’d make. But these I like. And by that I mean I get up 15 mins earlier than usual to have time to cook this every single weekday. What I do, is make the pancake batter (skip the stevia and add a pinch of salt) and let it sit while I cook some bacon in the pan. I save the bacon fat, and cook the pancakes in a mixture of bacon fat and coconut oil. Super tasty and keeps me going easily till lunch! I’ve made the sweet ones for dessert crepes, with lots of cinnamon and ground vanilla. Will have to try the apple butter next time. Yum!
The changes I made were: I separated the eggs and whipped the eggs whites until they had soft peaks. I added 1/4 tsp of tartar sauce to help. You can whip the egg whites by hand, however it takes awhile and can be tiring. I suggest a mixer of some kind. I then took out 2/3 of the egg whites, leaving 1/3rd in the mixer bowl. I then added the ingredients as the recipe calls for. After these ingredients are mixed, I then gently folded in the remaining 2/3rd egg whites with a spatula until it was JUST mixed. Be careful not to over mix because you want to keep the egg whites nice and fluffy- it helps the pancakes be airy. I added HWC by Tbsp until the batter was the perfect pancake consistency, gently mixing it in. I then cooked like normal. The batter did thicken slightly toward the end as I was finishing up, but I added a smidge more HWC and it fixed it perfectly.

Sadly, I must be a measurement conversion idiot. Would you mind sharing what 2 Oz of Almond Flour and 2oz of cream equal to in the standard measuring system? I’m guessing it’s approximately 1/3 cup of each? I made the hubby rush to the store for syrup with a promise of pancakes as a reward but now…I’m googling conversion measurements and feeling stupid.

Made this today and it was delicious. Unfortunately, I only had a 28oz can of diced tomatoes, so I used the whole thing, which likely added a few extra carbs. Because of the extra tomatoes, I increased the spices a bit. It was really delicious and I will definitely make this again. My husband enjoyed two helpings. Reluctantly, I stopped at one serving.

Hi Valerie, I was the same way with coffee until I figured a way to wean mysel off of it by slowly adding decaf to my regular coffee. each day I would add more decaf and less regular coffee until eventually I would have a cup of decaf. it tastes the same but the caffeine effect is different Im not sure with soda though, but at least now you can try the half and half with regular soda and diet sodas in a cup. It may taste too sweet at first but you have to allow yourself to get used to it and gradually decrease the regular soda in the cup and add more diet soda. You can also lower your intake of it as well. These days they also have caffeine free soda as well so you have some weaning options instead of cold turkey. Your soda mixture will have just enough caffeine in it to prevent a migraine, but allow you to consume less caffeine eventually until you might try adding some water to your soda to wean yourself completely off of it. It’s worth a try.
This chili is really really good, and yes spicy! I used 2 lbs of 7% lean turkey instead. I did add a little water and was able to get 10 full cups of chili- definitely not 16- and with putting everything into My Fitness Pal the carb count is a lot higher than I wanted – about 13 net carbs per serving. Next time I will cut corners with the tomato paste etc to cut carbs..
Chicken and bacon is a firm favorite in our family and these skewers are too! These make a fantastic appetizer, a satisfying main served with vegetables or salad and a sauce, or you can turn them into party food by chopping the chicken into bite-size pieces and rolling the bacon before sliding them onto the skewers. These also cook well in the oven so you don’t have to wait for a grill day!
I’ve only one question. I work in shifts and at 4.30 in the morning I can not eat my breakfast (lazy – I manage to get out of bed and into my car in 30 minutes ;-). Not even if I make it the day before…I just can’t swallow the stuff. But I have to eat something because I’m in my car for more than a hour. Can I have a liquid breakfast at those times?
I have made these a few times now and they are one of our favorite keto cookies. I used xylitol this time and had great success. I was also chatting while preparing and forgot to pat down the balls of dough prior to baking. I remembered this about 2 minutes before they were done, so I whipped the pan out of the oven and pressed softly with a spatula. They turned out moist and chewy like a macaroon. I keep mine in the freezer so they are always like freshly baked when we enjoy them. Thanks for a great recipe!

EUREKA!!!!!!!!!!! I am a new reader of your blog but I am not new to low carb. I have missed bread so, so badly. I have tried the low carb tortillas and even tried a paleo bread recipe but nothing gave me that feeling that I was actually eating a yummy sandwich. Enter the cream cheese pancake. I made them for the first time last night. I have actually dubbed them “crepes” as I think mine came out thinner than an actual pancake. But who cares!! They are so yummy. I haven’t tried them for breakfast with sf syrup yet but I intend to. Today I’m in the midst of your three-day keto kickstart so I’m eating ham, cheese and spinach rolled in the “pancake” with a drizzle of ranch dressing. I feel like I’ve discovered electricity! ha! I am officially an avid follower. Keep up the good work! I can’t wait to try the avocado-based chocolate desserts-made some last night. By the way, no need to include “optional” on bourbon as an ingredient. That’s just a waste of ink. LOL!! Thanks again for doing all the work so your readers (including me) are able to reap the benefits! :)
Hi, not to rain on someone else’s blog, but I have made these twice and was blown away- search’ bakery style keto chocolate chip cookies’. It is unbelievable that they are keto. Sorry, Kim, but these are really, REALLY good. give them a try, too! BTW, thank you so much for posting this dessert list. I especially like the dairy free pudding one, Ill be trying that as soon as I can get the ingredients.

Just this week, a 25,000-person study presented at the European Society of Cardiology Congress in Munich suggested that people on the lowest-carb diets had the highest risk of dying from cancer, cardiovascular conditions, and all other causes. Another study, published this month in the Lancet, also found that people who followed diets that were low in carbs and high in animal proteins had a higher risk of early death compared to those who consumed carbs in moderation. (The opposite was true, however, for low-carb dieters who opted for plant-based proteins over meat and dairy.)
I’ve heard some say that’s true but I’ve stayed in ketosis (checked by blood testing) in my morning bulletproof coffee even using butter and MCT oil. I think the key is that you don’t want to spike insulin during a fast and if going over a certain calorie amount makes that happen then right I wouldn’t do it. But this recipe is my afternoon snack after I’ve broken my fast with my lunch meal and a few hours before I eat my dinner meal.

I just tried this recipe this morning because I wanted something a bit sweet. I used a combination (equal amounts) of coconut flour and almond flour. I also added a TBSP of coconut flakes into the mix. When cooking on the pan, I plopped 4-5 fresh blueberries on top because I do not like syrup. The added coconut and blueberries made these pancakes delicious!! Will definitely make these again.

I made the other night, and it is amazing!!! I posted on Instagram (which you saw, thank you!), And I split it into two containers. In one, for my daughter who needs actually to gain weight, I made little teeny chunks from a refrigerated sugar cookie dough. She loves cookie dough ice cream but doesn’t like chocolate, so I made something that doesn’t actually exist commercially and she loves it! For the hubby and I, I put Lily’s Stevia sweetened dark chocolate chips and chopped roasted hazelnuts. It is So Good!! The only thing I changed is for the sugar substitute, I used 1/4 cup xyla, and 1/4 cup swerve granulated. It is amazing, and far better than Halo! Thank you so much for this recipe!

I have been keto for two years. I have lost 55 lbs. and feel better than ever, at 60 years old. My one weakness has always been ice cream, which is a no-no on the keto way of eating. I made this yesterday and it is absolutely fabulous!!! It is very filling and you cannot eat a lot of it. I did not have Choczero but used Lakanto Maple Flavored Sugar-Free Syrup. Diabetic ketoacidosis is an acute metabolic complication of diabetes characterized by hyperglycemia, hyperketonemia, and metabolic acidosis. It causes nausea, vomiting, and abdominal pain and can progress to cerebral edema, coma, and death. Treatment involves volume expansion, insulin replacement, and prevention of hypokalemia.

Ketorolac is contraindicated in those with hypersensitivity, allergies to the medication, cross-sensitivity to other NSAIDs, prior to surgery, history of peptic ulcer disease, gastrointestinal bleeding, alcohol intolerance, renal impairment, cerebrovascular bleeding, nasal polyps, angioedema, and asthma.[2][3] Recommendations exist for cautious use of ketorolac in those who have experienced cardiovascular disease, myocardial infarction, stroke, heart failure, coagulation disorders, renal impairment, and hepatic impairment.[2][3]
