Another mechanism that could be involved in food-regulation during KD is the gamma aminobutyric acid (GABA) and glutamate regulation. Wu et al. demonstrated that GABAergic signaling from the NPY/AgRP neurons to the parabrachial nucleus (located in the dorsolateral part of the pons) is involved in many regulatory sensory stimuli including taste and gastric distension, regulate feeding behavior. GABA signaling seems to prevent animals from anorexia when AgRP neurons were destroyed (Wu et al., 2009). These findings are yet another contradictory aspect of KDs and food behavior; ketosis should increase the availability of glutamate (via diminution of transamination of glutamate to aspartate) and therefore increase GABA and glutamine levels; moreover, in ketosis, the brain imports a huge amount of acetate and converts it through glia into glutamine (an important precursor of GABA) (Yudkoff et al., 2008). The result of these mechanisms, together with the increased mitochondrial metabolism and flux through the TCA cycle, is an increased synthesis of glutamine and a “buffering” of glutamate. These results are not consistent with the well-documented anorexigenic effect of KDs, and therefore the GABA hypothesis cannot be taken into account despite the mild euphoria often reported during a KD that is probably due to the action of BHB (Brown, 2007) and can help to reduce appetite.

A ketogenic diet is clinically and experimentally effective in antiepileptic and antiobesity treatments; however, the molecular mechanisms of its action remain to be elucidated. In some cases, a ketogenic diet is far better than modern anticonvulsants (25). Recently, it has been shown that a ketogenic diet is a safe potential alternative to other existing therapies for infantile spasms (27). It was further shown that a ketogenic diet could act as a mood stabilizer in bipolar illness (28). Beneficial changes in the brain energy profile have been observed in subjects who are on a ketogenic diet (28). This is a significant observation because cerebral hypometabolism is a characteristic feature of those who suffer from depression or mania (28). It has also been found that a ketogenic diet affects signal transduction in neurons by inducing changes in the basal status of protein phosphorylation (29). In another study (30), it was shown that a ketogenic diet induced gene expression in the brain. These studies provide evidence to explain the actions of a ketogenic diet in the brain.
Yes, carbs are necessary, but on keto, we eat healthy carbs, not sugar or starchy carbs. I’m glad you like your diet, but please don’t pass on misinformation. Keto has been proven to be an extremely healthy diet. I’ve lost 230 lbs, no longer have congestive heart failure or diabetes and have perfect numbers on my blood tests now. My blood pressure is no longer high and my resting heart rate is now 50 instead of 70. Facts don’t lie.

Ok so I made them again (for the 3rd time) and followed the recipe to a tee, but they still turned out super flat (taste good though).  Should I be letting the cream cheese soften before mixing the ingredients?  Maybe that makes them flat when its right out of the fridge?  I don’t know, I’m just desperate for fluffy pancakes like the photo and like what many of you got! It snowed here a few days ago before I went grocery shopping. Yes, I had plenty of foods but I was determined to start keto. Thankfully I had plenty of eggs. So, I just up and started the egg fast plan because it was keto and I could do it with the items I had. No need to brave the cold. I loved these super simple and very quick pancakes. I can easily see myself making these a lot and I can switch the flavor profile. They are a great blank canvas. 5 days Keto, egg fast. Doing great. Hit ketosis late day two, so far no real keto flu symptoms. Keeping my fingers crossed. Thank you so much for sharing your creations. I’ve pointed several people to this website for ideas.

Brandi, Oh no, I’m sorry to hear about such a severe allergy! We carefully tested and re-tested this recipe and this is the best version we came up with. In order to come up with a recipe that doesn’t use coconut flour, we’d have to play around with not only alternative flours, but also adjust the amount of liquid (because coconut flour absorbs more liquid than most other flours), and additionally, potentially alter the bake temperature and bake time as well. One of the foods that people tell us they miss most after going keto is bread. (And cookies or cakes, but you get the idea.) We get it, bread is undeniably comfort food. Growing up, it wasn’t unheard of to eat toast for breakfast, a sandwich for lunch, and maybe even a slice of buttered bread along with dinner. hi there, what i did was fold in about 1/4 of the egg whites into the thick almond flour mixture, then added another 1/4 until it was no longer thick – it will slacken the mixture. then fold in 1/2 of the remaining egg whites and then fold in the remaining 1/2 after that. I got a fluffier consistency this way w/o getting rid of all the air bubbles from the egg whites.
My question is: what if I want to be in ketosis for all the reasons mentioned in the Life Extension article and because I don't feel a strong urge to eat in between meals when I go lower carb and if I up carb intake I get hungrier more frequently and get urges . . . BUT on the flip side, I don't seem to digest fat all that well(dairy in particular is a no-no) and constipation is an issue and starchy carbs seem to help with that. It's a bit of a catch-22.
oh yeah this is fantastic! I used a few chopped up chipotle peppers in adobe sauce instead of the jalapenos. It added a great smokey flavor! Also it was a bit thick, so I added some salsa that I had in the fridge! Finally, I added a little bit of sugar-free ketchup mixed with broth, to add more liquid. I know, that’s more carbs, but I like a chili with some broth. It was all just fine! This is a recipe that you can easily adapt to your own tastes, but the overall flavor still remains spicy which is fabulous! Just saying! Try it you won’t regret it.

The first month or two on keto you may experience some strange periods (aka. Shark Week.) Don’t be alarmed. When you lose weight and your body detoxes from sugar and excess carbs, all kinds of hormonal changes (for the better) occur. Initially though, you may experience heavier periods than normal, more extreme PMS symptoms, etc. This is normal, and while it’s inconvenient it shouldn’t last more than a few months at the most.If your weight loss is rapid on keto (let’s hope), you may also lose more hair than normal for a month or two. It can be disconcerting, but it’s not permanent and will stop when your hormones regulate.
That was really interesting and useful information. But I wanted to ask you about what Dom said at time (52min). What does he mean,when he says 1 mml increase is about 10% increase of substrate to the brain? Is that (same glucose amount in brain) + (typical ketone amount in brain)+ and 10% more? Or does it substitute glucose? And if it is so, does the brain use that energy or does it just stay around the brain without being used? I know we can’t know for sure, but it would be helpful if you said what you think. Thanks in advance!
The nutrition label I posted is made by a wordpress plugin that sources the ingredient nutrition data from the USDA nutrient database. It totals all the ingredients, then divides by the number of servings indicated. It was the most accurate option as far as nutrition plugins go, but unfortunately, it rounds down as the US labeling laws allow. I don’t believe the nutrition is derived from brand-specific ingredients within the database, so that may further explain the discrepancy. Brand to brand can vary pretty wildly; I used to manually create the nutrition tables in Excel and post them on the site to get a line by line breakdown of everything, but my readers preferred the label.
Hi Jodi, I haven’t tried that, but don’t think it would work well for this recipe. First, yeast needs sugar (for it to consume – it’s not typically in the end result), so you’d need to add that. But also, just with how we are making the bread fluffy with beaten egg whites, I don’t think yeast would work. If you want to try adding yeast to a low carb bread, I would do it with this low carb bread recipe instead.
Well, I am going to give this another try. I have great difficulty in eating greens , or drinking them, also I am not fond of fats, years and years of low fat diets have totally screwed my metabolism,and taste buds. I will read this page every day to keep my mind focused. Start tomorrow when I get up …… I work nights which can cause me problems as well. We love, love your recipe so much. Thank you for posting it. We’ve adapted it a bit for us and my husband asks for it every Sunday. Since we like to save some to reheat for breakfast for the work week and need to add in more greens this is what we do: when the ground beef is halfway browned we add a large handful of spinach. Then we also add a handful of tomatoes to the egg mixture. We also skip the cheese for my husband. This way it reheats really well during the week. Thanks again

Ketoacidosis happens most often in a person with type 1 diabetes. This is a condition where the body does not make enough insulin. I used to manually write the nutrition data for everything, but was given feedback that it was a bit overkill; people preferred the easy to read labels vs my tables and the nutrition tool has been a huge time saver on my end, although it could definitely be improved. My Fitness Pal has a lot of user-generated entries and is notorious for inaccurate nutrition info because of this… if you are using MFP, make sure to use the USDA verified options (there’s usually a symbol to note it in the app). Or you can manually add them up from the USDA nutrient database to get the best data source. Hope that helps!
Tried this tonight. It’s my first attempt and I think I want to tweak it a bit. I think next time (and there will be a next time) I’m going to cook the crust a bit in the oven. It seemed a bit too crumbly to me. Also I kept checking the center with the same toothpick and that lead me to over cook this by about 10 mins. That longer cooking time caused the filling to be not as creamy as it should have been.

Tomatoes fall on the maybe-to-no list for keto. Technically a fruit, they contain a fair amount of sugar and can really sneak in the carbs. One solution would be to go for a Texas chili which is just dried chilis and meat (no beans, no tomato) or a beanless white chili or chili verde. But I wanted to take on a more classic red chili recipe here, which meant I needed to solve the tomato dilemma.

I only had one problem with this recipe, and it was a big one… I didn’t double the batch!! Thank you so much for this! I missed chili so much! I had a recipe I always used to make pre-keto and I absolutely loved it. But this is up there. Next time I’ll definitely double it and add some green chiles and maybe a little sweetener since I love the slight sweetness mixed with the spicy. This is a keeper 🙂
