Patients often are profoundly dehydrated and have a significantly depleted potassium level (as high as 5 mEq/kg body weight). A normal or even elevated serum potassium concentration may be seen due to the extracellular shift of potassium in acidotic conditions, and this very poorly reflects the patient's total potassium stores. The serum potassium concentration can drop precipitously once insulin treatment is started, so great care must be taken to repeatedly monitor serum potassium levels. Urinary loss of ketoanions with brisk diuresis and intact renal function also may lead to a component of hyperchloremic metabolic acidosis.
I tried this tonight and loved it! I, too, have a very soft crust that is releasing a bit of butter. However, it may stabilize once it sets in the refrigerator. If not, I will reduce the butter by a 1/4 until I hit the right amount. Since it’s just me, I plan to see how well they freeze. I’ve missed lemon bars since I started Keto, so this was a welcomed discovery.

Just a followup to my earlier post with some quick numbers – I have been keeping carbs under 15 per day and the fat around 75-85%, with protein about 25% or less. I have not lost one pound while on the Keto diet, but I do feel that it is a much more natural way to eat. I don’t snack, I only eat 3 meals daily, I just cannot get into the habit of snacking and I’m not hungry enough to be bothered with additional food.

Only issue I had was that when it said I could use a blender I went ahead and used the Magic Bullet thinking that was the same thing. It is not. I tried to open it and it was stuck tight, finally got it to twist a little and then it exploded. All. Over. My. Kitchen. It was the baking power, so beware. It took almost 3 hours to clean up. What a nightmare lol.
Hi Eva, That’s awesome that you are helping your son this way. I haven’t tried this with other tools, but you could probably use either the blender or the food processor. The key is to pulse in step 5, not just constantly blend, so that the whites don’t fully break down. Other than that, it should be pretty similar. As for the yolks, if you don’t want to make creme brulee, I usually just put a couple extras into an omelet (or breakfast casserole, or any other dish requiring cooked eggs) mixed with whole eggs.

I’m sure the almond milk was the culprit. Almond milk cannot sub for heavy cream whatsoever in my book. I followed the recipe and my pancakes did not stay risen after I took them off the heat but they tasted amazing, imo. But I have been doing keto for almost 4 months now and my taste buds have changed so it is possible that you still may not like them.
I am so upset with this recipe… I followed this recipe exactly put the eggs cream cheese and vanilla and  the 1 Tb water in my vitamix then added the dry ingredients and it was a crumbly mess and NOT liquid AT ALL !!… I added 1 more egg thinking my 2 eggs weren’t lrg enough but that did little to nothing .. I ended up having to add hwc and more water to just get it to the consistency of pourable batter ., however the batter now would not let me flip them w/o them completely falling apart.. What the heck…your recipe states 1 Tb of water how can batterbe made  with 1 Tb liquid with 2/3 cup flour … SOMETHING IS DEFINITELY WRONG

Hi Dee Dee, It’s supposed to be jiggly in the middle when you take it out. It firms up as it cools and then when it chills in the fridge. I haven’t experienced cracking with it but the cause doesn’t have to do with being not done, it’s sudden temperature changes. If you want to be on the safe side you can bake it in a water bath next time. I hope you still loved the taste!

Think keto diets are all about the protein? Nope, that’s wrong. These results are consistent with those of Ratliff et al (Ratliff et al., 2009), who found no significant change in fasting plasma ghrelin after 12 weeks of VLCD.

Had a question about the consistency of the first mixture (coconut milk, sugar and xanthan gum). It seems I never get the same consistency you get. Your’s looks thick and smooth, my remains quite runny. Once I decide to add additional xanthan gum, it helped but it did not look like the one on your video, it really was more like ‘gummy’. Like homemade slime, you make with the kids. In the end, the ice cream was great but was wondering if there is something I’m doing wrong. It may be the brand of coconut milk too. Just not sure.

It snowed here a few days ago before I went grocery shopping. Yes, I had plenty of foods but I was determined to start keto. Thankfully I had plenty of eggs. So, I just up and started the egg fast plan because it was keto and I could do it with the items I had. No need to brave the cold. I loved these super simple and very quick pancakes. I can easily see myself making these a lot and I can switch the flavor profile. They are a great blank canvas. 5 days Keto, egg fast. Doing great. Well said. Additionally, the conspiracy theorist in me wonders how many visits to the doctor are diet related? How many huge businesses rely on people consuming grains to pad their bank account? Hi – thank you for all your recipes – however, I was wondering if you could tell us what power on the microwave you used….I did as you said 1 minute in microwave – however it boiled, separated, and boiled over!!!! So I guess it should not be on full power????? So the 2nd one I have put in using the oven! Not out yet but I expect it should be better!!!!! However would like to be able to microwave them as you did! So please could you tell me what power you used. PS I have never done a cheesecake before so maybe it is my inexperience and I should have known what power to do!
This is questionable. There ARE a few studies that suggest caffeine may cause blood sugar to rise, with consequent effect on insulin ... The studies involve consuming 50 gm glucose orally, followed by a dose of caffeine. This is quite different from a low carber, who is consuming only 20 gm carbs, in the form of high-fiber vegetables, spread throughout the day.
For those looking for something just a little closer to real sugar, you can use Xylitol. It cooks and tastes very similar to sugar, but it has a slight glycemic impact (13 vs. 100 for sugar). It is great, but please keep in mind that it is very toxic to animals and it will raise insulin levels slightly. These are the two most cited reasons for not using Xylitol.

Beef gelatin is also packed with protein, collagen, and is amazing for your digestive health. In essence, not only does it make your ice cream super thick and creamy, it also gives it a nutritious boost. Because beef gelatin thickens and coagulates liquid, you will notice as your ice cream base cools in the refrigerator, it gets very thick. In fact, if you allow the ice cream base to sit for more than a few hours, it will quite literally turn into custard. This is no big deal at all! You can simply stir it up before pouring it into your ice cream maker and proceed as normal. 🙂
Keto is a very low carb diet, often it means no more than 20 net carbs a day. I had been low carb for 4 years prior to going keto a year ago, my daily carb intake was 50-70 grams a day and the carbs were coming mostly from non starchy vegetables. But yet even being lower carb than the standard American diet, it wasn’t enough for me to still not crave sugar and carbs.
I am a reluctant cook and baker however since switching over to Keto woe I have been baking a lot more. I made these today and they taste incredible. So yummy. I often make substitutions and hope for the best. I did substitute a few things here and they still turned out great. I can’t eat anything with sugar alcohol so finding a great sugar substitute was a challenge. I have been using Kakato sugar substitute and it worked great. For the filling I only used 1/2 cup instead of 3/4. I also did not have lemon zest or fresh lemons. I used non-GAO lemon juice—8 tablespoons and it tastes fantastic. For those that asked about type of butter….I always use Kerrygold or another grass-fed butter. I also baked the crust for 5 extra minutes since it was still so wet. I also baked the entire dish for 5 extra minutes. The crust was awesome due to the buttery crunch with the extra baking. I hope this helps other novice bakers out there.
Exactly my experience. No symptoms initially then on day 6 I was totally zapped of energy. I couldn't even raise my arms to wash my hair in the shower! Then on day 8, I got the headaches, mental fog...still no energy. I am on day 9 now. Still no energy, still with the headaches and mental fog. I am hoping I'm hoping it's my bodies last ditch attempt into tricking me to eat carbs so I am sticking it out. I hope it passes soon as feel dreadful..
That is, until it's snack time—then, if you're on the keto diet, your'e basically SOL (unless, you know, you like having an entire steak for a snack). Think about it: All the best snacks are off limits on the keto diet (damn that fickle 70 percent fat, 25 percent protein, 5 percent carbs ratio). Granola bars, crackers, cookies—all off-limits on a keto diet.
The enchilada recipe wasn’t from Suzanne, but from the fans’ recipe blog that used to be on her site, back in the last century :) On that blog we weren’t allowed to “give out” recipes from her books but could post any we came up with ourselves. It’s a simple recipe using egg crepes(just beaten eggs) and all the usual fillings, then some heavy cream poured over for the sauce and cheese sprinkled on top, then baked. Very rich and delicious but not for the lactose intolerant! Even my fat-fearing boss would bring chicken leftovers and hint that I might make this and bring it in to work!
